What is cinematic model essentially?

More triangles/bones/materials?

Can I use default model as cinematic model?

It's just rigged up for cinematic vs gameplay.  I think only the player & a handful of NPC's have special cinematic models.  Everything else uses the game model & cinematic animations.

Perhaps not in Doom 3, but they are different models and animations. Cinematic models have more tris, can have different bones and respective animations.
